Gastro dinner is a solemn and elegant banquet with the simultaneous serving of delicious dishes for each guest with a presentation by the chef. On the eve of the new season, we are introducing two new sets, which consist of 8 courses and are suitable for events of up to 50 guests.
The first set includes:
Fermented tuna in kimchi sauce
Apple tortellini with crab in strawberry foam
Oyster with stracciatella, tomatoes, tarragon and salmon caviar
Fried scallops with artichokes
Crayfish tails baked in sea urchin
Burnt marbled beef carpaccio with crispy capers
Shrimp in bacon with zucchini pasta
Coconut creme brulee
In the second set:
Coconut lard with lingonberry and chia caviar, shot with oxtail broth and sherry
Pumpkin tortellini with tomato caviar and mango foam
Tuna and shrimp tartare with strawberries, physalis and fruit foam
Scallop on a bed of citrus, avocado and zucchini
Baked oyster with stewed leeks, tomato shooter
Donut with dried venison, lingonberry and mango caviar, with miso sauce
Veal medallion in chocolate sauce on corn polenta
Melon and basil sorbet with champagne foam
