Snacks include reindeer pate with pine cone jam and cranberries, crayfish tails baked in sea urchin, pistachio cake with chicken liver and oxtail broth. Hot dishes included duck with sweet potato puree and baked apple, halibut with stewed asparagus, sun-dried tomatoes and cucumber foam. Among the desserts, there is a chocolate-honey cone, as well as a coconut creme brulee, which is aged for 24 hours in natural coconut, absorbing the taste of an exotic fruit.
